
Apple Sponge
A warm, homestyle baked pudding — cinnamon-spiced stewed apples sealed under a light golden sponge. Works beautifully with peaches, apricots, plums or pears too.
Ingredients
- 7 cooking apples, peeled & sliced
- 1 cup water
- ½ cup sugar
- Cinnamon, to taste
- 3 eggs
- 1 good cup castor (caster) sugar
- Pinch of salt
- ½ cup self-raising flour, sifted
Instructions

Cook the apples with the water, sugar and a good sprinkle of cinnamon until tender. Keep the fruit hot.

In the meantime, beat 3 eggs, a good cup of castor sugar and a pinch of salt together, then mix in ½ cup of sifted self-raising flour.

Put the hot fruit in a greased pyrex dish and seal the top with the cake mix. Bake until the cake is cooked through.
Tips & Notes
You can also use peaches, apricots, plums or pears instead of apples. Make sure the fruit is hot when you top it with the cake mix.
